Beef Roast with Veggies

Cook in Slow-Cooker
Prep: 25 minutes

Yield: 8 servings
Put olive oil in bottom of crock pot and turn heat to high.
Add garlic and let start to heat.
Season roast with salt and pepper or your choice of seasoning.
Place roast in crock pot with garlic. Then add onions, carrots and potatoes.
While that is all getting nice and warm together, mix cream of mushroom with lipton onion and add about 1 cup of beef broth.Pour 2 cups of broth in crock pot over roast and vegetables. Then add then soup mixture.
After about an hour turn to low and let cook 8 hours till tender. You can leave it cooking on high for about 6 hours.
If you like a thicker gravy with your roast, take about 2 tbsp of corn starch and place in a small bowl. Then add some of the broth from the roast and stir till lumps are gone. Add back to the crock pot and stir in.
Then enjoy a warm and delicious meal with your family.
