Prime Rib: Low & High Heat Options

Ingredients:

1 Prime Rib Roast
Salt
Pepper

Directions: Low Heat

Set out roast allowing it to reach room temperature.

Preheat oven to 450 degrees.

Cook roast fat side up for 15 minutes.

Reduce heat to 325 degrees. Continue to cook for 15 minutes per pound. Internal temperature 120.

Remove roast from oven and let rest for 20 minutes. Internal temperature should now be 130 degrees for medium rare.

Directions: High Heat
Set out roast, allowing it to reach room temperature.

Preheat oven to 500 degrees.

Once oven is ready, place roast in oven with fat side up.

Time: cook roast for 5 min per pound.

Turn oven off, leave roast in the oven with door shut for 2 hours. Internal temperature – 130 degrees for medium rare.
