Breakfast Frittata

Cook: 20 minutes

Yield: 6 servings


8 Eggs
1 lbs Bacon (cut into smaller pieces)
1/4 cup heavy cream
Salt and Pepper to taste
2 cups Spinach
1 cup Mushrooms
1 cup Cherry Tomatoes
Olive Oil
1-2 cups Shredded Cheese (any favorite will work)


Preheat oven to 350.

In a large bowl mix the eggs, heavy cream, salt and pepper then set aside.

In a cast iron skillet or oven safe skillet, cook bacon till crisp.

Drain grease and add vegetables in.  Add a nice drizzle of olive oil.

Once the spinach has wilted add the egg mixture and the cheese to the pan. Then place in pre heated oven and cook for 15-20 minutes until a toothpick inserted in the middle comes out clean.

Let cool slice and enjoy!
