Roasted Beef Tenderloin

Stove or Crockpot
Prep: 30 minutes
Cook: 8-10 hours
Yield: 6-8 servings
- 2 lbs Lean Beef Stew
- Olive Oil
- Salt and Pepper
- Bay Leaves
- 1 can cream of mushroom soup
- 1 container beef broth or homemade broth if available
- 3 carrots cut
- 3 stalks celery cut
- 2 lbs potatoes cut
- 1 large onion diced
- 3 cloves garlic minced
Drizzle olive oil in bottom of crock pot and turn on high.
Toss beef stew in flour and salt and pepper.
Place beef in crock pot and add garlic.
Let it start to brown then add broth, cream of mushroom, bay leaves and the remaining vegetables.
Cover reduce heat to low and let cook 6-8 hours.
*Some crock pots cook faster than others.
If you prefer to use a dutch oven, start on the stove then transfer to oven at 350 and continue to cook for about 2-3 hours.
Add a yummy grilled cheese and watch your family enjoy!
